Easy Chia Pudding Recipe
Chia seeds are a great way to boost our overall health. They are gluten free and contain omega 3s, fibre, antioxidants and minerals. Here is an easy Chia Pudding Recipe that goes well with any fruit – we have chosen mango for added vitamin C, B6, A, K and folate.
Combine 3 tablespoons chia seeds, 1 cup coconut milk (or almond milk), 1/2 teaspoon vanilla essence and 1-2 tablespoons organic maple syrup in a bowl and let it sit for 5 mins. Stir again to smooth out any clumps and then leave in the fridge for 1-2 hours. To serve, blend the flesh of 1 mango to preferred consistency and create alternate layers in a glass or bowl of chia pudding and pureed mango. Add a few raspberries on top for extra zing, garnish with a mint leaf and serve. Yum!
